Tom Ka Paste Lobo

Tom Ka is a Thai style curry, usually prepared with chicken and mushrooms. This delightful cream soup harmonized by the flavor of coconut milk, galangal root, kaffir lime leaves and heart of lemongrass. Word “tom” in the soup’s name means “to boil”, while “ka” refers Galangal root and “kai” is a chicken. Despite the most common version (originated around 1890) uses chicken, you can prepare Tom Ka using other proteins. Typically in Thailand, alternative proteins are seafood, as they pair best with the flavour profile of Tom ka. In this case it will be named “Tom ka thaley”, where “taley” mean “sea/seafood”.
Besides chicken and mushrooms, some people also add various vegetables, such as carrot, baby corn, tomatoes etc.

Ingredients
Salt 25%, Galangal 15%, Lemongrass 12%, Sugar 10%, Soybean Oil 10%, Flavor Enhancer (Monosodium Glutamate) 5%, Kaffir Lime Peel 5%, Shallot 5%, Coriander Root 5%, Chili 5%, Acidity regulator (Citric Acid) 3%.
Cooking Instructions (Tom Kha Kai – chicken)
- Boil 1 cup (240 ml) coconut milk. Add 300g chicken meat together with contents of this packet. Cook until chicken is well-done
- Add 2 cups (480 ml) water. Simmer until chicken is tender
- Add one more cup (240 ml) coconut milk and 100g mushroom. Bring to a boil and ready to serve.
- Before serving, add fish sauce or salt and lime juice to taste
Suggested uses
Can add carrot, baby corn, tomatoes and other vegetables as desired.
Beyond tom kha kai (chicken-based tom kha), there are other versions of tom kha made with seafood (tom kha thale), mushrooms (tom kha het), pork (tom kha mu) and tofu (tom kha taohu).
Cook gently to prevent the coconut milk from separating.
Useful tips
Submerge the packet in hot water for 1 minute. Cut open, the paste will come out easily.
